This one pan caprese chicken bake takes the classic combination of fresh tomatoes, mozzarella, and basil to new heights. This recipe is both prepared and baked to perfection in one pan, minimizing your dishes. This one pan caprese chicken recipe shines brightest during the peak of summer’s bounty. As the sun-drenched days bring forth a plethora of ripe, juicy tomatoes and fragrant basil, this dish effortlessly captures the essence of the season’s flavors.

Ingredients
- Chicken Breast
- Avocado Oil
- Salt
- Pepper
- Fresh tomatoes
- Fresh Basil
- Balsamic glaze
- Mushrooms (Optional)

Instructions
- Preheat your oven to 400 F and set your rack to the middle position.
- Butterfly the chicken breast: Place the chicken breast on a clean work surface. Hold a long sharp knife along the long side of the chicken and then slice through the breast almost to the end, being careful not to cut all the way through.
- Add your butterflied chicken breast to a 9×13 pan. Drizzle the chicken with avocado oil and season with salt and pepper on the top of the breasts and then open your chicken breast to the butterfly position and repeat to make sure your chicken is well seasoned.
- Add 2 slices of fresh mozarella to one side of each chicken breast and then add 2-3 thin slices of fresh tomatoes on top of the mozarella. Fold the empty side of the chicken on top of the side with the filling and then use 2 toothpicks to secure the chicken.
- Add the mushrooms into the pan surrounding the chicken breast, drizzle with avocado oil, and season with your salt and pepper.
- Bake for about 20-23 minutes or until the chicken reaches an internal temperature of 165F. Once the chicken is cooked through, remove the chicken from heat and garnish with freshly sliced basil and then drizzle with your balsamic glaze. Serve with your favorite starchy vegetable or grain.
Hint: You can also add in basil leaves on top of the tomato slices to up the flavor.
