    Ingredients

This is a side view close up of my lemon pepper chicken skewers on a bed of brown rice and salad.
    • Chicken Breast, Diced into 1″ Cubes: Star of the show and serves as the lean protein for this meal.
    • Avocado Oil: A high quality oil that is heart healthy and has a high smoke point which is perfect for air-fryer cooking.
    • Lemon Zest: Adds an additional deep lemon flavor
    • Lemon Juice: Used along with the avocado oil for the marinade
    • Salt
    • Pepper
    • Garlic Powder
    • Butter, Melted
    • Fresh Garlic Cloves,Minced: Can use garlic powder if you don’t have fresh cloves on hand.
    • Lemon Pepper Seasoning

    Serve with:

    • Side Salad: for some color, fiber, healthy fats and nutrients. I used a pre-made salad kit!
    • Brown or White rice: for some complex carbohydrates and to stay fuller longer.

    See recipe card for quantities.

    Instructions

    1. If using wooden skewers, soak them in a warm water bath until they are ready to be used.
    2. Start by dicing your chicken according to the description above then add the diced chicken breast into a medium bowl along with the avocado oil, lemon zest, lemon juice, salt, pepper and garlic powder and marinate in the fridge until you run out of patience or at least 15-20 minutes.
    3. Once your chicken is done marinating, grab your skewers and thread the chicken chunks one by one until you have evenly distributed them amongst the skewers.
    4. Pre-heat your air-fryer to 400 F and Cook them for 14-16 minutes, flipping half way through or until they are no longer pink in the center and their internal temperature reaches 165F. Make sure not to overcook them or they will dry out.
    5. While your chicken skewers are cooking, add your butter to a small microwaveable bowl and heat up for 30 seconds until it is melted, then add in your minced garlic and lemon pepper seasoning. Stir until well combined. When your chicken is done cooking, use a basting brush to evenly brush the mixture on top of the chicken skewers, serve with suggested sides and enjoy!

    Substitutions

    • Dairy-Free – use dairy-free butter to make this recipe dairy-free.

This recipe is gluten-free as is, just make sure that the lemon pepper seasoning you choose, doesn’t have any gluten fillers in it.

    Variations

    • Paprika– Skip the lemon pepper and add either regular or smoked paprika into the marinade to make a different variation of this recipe.
    • Deluxe – add some veggies such as zucchini and onions to the skewers!

This recipe is toddler and kid-friendly on it’s own!

    Equipment

All you need to make these lemon pepper chicken skewers is:

    • An air-fryer or grill: If you are in the market for a dual zone air-fryer, this is the one I have and love. They also have this air-fryer in a single zone as well.
    • Skewers: You can use either metal skewers or wooden skewers.
    • Basting Brush

    Storage

You can store leftovers in an air-tight container in the fridge for up to 4 days. This dish can also be ingredient prepped as a protein source for different dinners throughout the week!

    Top tip

Use disposable air fryer paper for quick and easy clean up!
