Preheat your oven to 350 F and set your rack to the middle position.
Cut your apple in half, core the center and then cut your apple halves in half one more time to create four equal parts. Using a mandolin or a sharp knife, thinly slice your apple and add the slices into a medium bowl.
Add your brown sugar, cinnamon, and nutmeg to the apple slices. Mix until all the sugar and spices are evenly distributed on the apples.
Depending on the shape of your brie, slice your cheese to make 8- 1" inch pieces. I had a large triangle shaped brie, so I did slice the tips which were shorter and then combined them to make a 1" inch "piece" as pictured in the video below.
Grab and open your package of crescent rolls, separate and evenly lay them on a parchment lined baking sheet. The rolls are shaped like triangles typically. You want to grab the "bottom" of the crescent triangle and place the brie slice(s) on top. Then add about 5-6 apple slices on top of the brie (it may be a little more depending on the size of your apples). Roll the crescent dough. Repeat the process until you are done and then make sure the rolls are evenly distributed on the baking sheet.
Spray crescent rolls with a think layer of avocado spray. Optional: You can top with a small amount of additional brown sugar and cinnamon. Bake in the oven for 15-16 minutes until the top of the crescent rolls are browned and your brie is melted. Enjoy!
