This chicken fajita casserole with rice is absolutely amazing and SO easy to make! It comes together in one pan and takes under 10 minutes to prepare! Not only is it extremely flavorful, but it's healthy and balanced. Serve it in a low bowl, top it with some greek yogurt and cilantro to make a yummy chicken fajita bowl!
Pre-heat your oven to 375 F and set your rack to the middle position.
Slice your bell peppers and onions.
Place white rice into a 9x13 casserole dish. Add your chicken bone broth over the rice. Next, add in your chicken breasts into an even layer on top. Using about half of your lemon pepper fajita seasoning, evenly season your chicken breasts. Then add in your sliced bell peppers and onions evenly on top of your seasoned chicken and then use the remaining packet and season your vegetables evenly on top.
Cover your casserole dish with foil and bake for 50 minutes or until your chicken has reached an internal temperature of 165 F, your vegetables are soft and your rice is cooked through.
Remove your casserole dish from the oven. Be careful not to burn yourself. Top with freshly grated cheddar cheese and then broil for 1-2 minutes until your cheese is melted and slightly browned.
Serve and then garnish with cilantro, lime and low fat greek yogurt or light sour cream.
