Equipment

  • 1 Small Pan
  • 2 Small bowls

Ingredients

  • 15 Pitted Medjool Dates
  • 1 Teaspoon Butter
  • Cup Dry Kataifi
  • Cup Pistachio Butter or Cream
  • 1 Tablespoon Tahini
  • ½ Cup Dark Bittersweet Chocolate Chips
  • ½ Teaspoon Coconut Oil
  • 2 Tablespoons Roasted Pistachios Crushed

Instructions

  • Start by opening up your pitted dates and place them on a plate.
  • Add 2 teaspoons of butter to a small pan on medium heat. When the butter melts, add in your dry kataifi. Stir and cook for 2-3 minutes until the kataifi begins to turn golden brown and then turn off the heat.
  • Next, add in your pistachio cream or butter and tahini. Stir using a small rubber spatula to avoid scraping your pan until everything is well combined and then place mixture into a small bowl.
  • Add about 1 teaspoon of filling into the middle of each date.
  • Add your dark bittersweet chocolate chips into a small microwave-safe bowl along with your coconut oil. Microwave for 30 seconds and then stir. Microwave for another 15 seconds and stir. Repeat until your chocolate is nice and melty.
  • Use a spoon to drizzle the chocolate on top of each date.
  • Add your roasted pistachios to a bag, use a utensil to crush the pistachios into small pieces. Add the crushed pistachios on top of the dates. You can also add some of the dry kataifi on top as well!
  • Refrigerate for 45 minutes-1 hour until the chocolate is set or place in the freezer for 15-30 minutes. Enjoy!

Notes

Hint: Make sure not to overcook or burn the kataifi. The kataifi should be slightly browned but not super dark in color.
Hint: Be careful not to burn yourself when you are heating up the chocolate. Use a rubber glove to carry the bowl and mix in between heating.
