Equipment

  • Large bowl
  • Baking Sheet
  • Parchment paper or a Silicone rubber mat

Ingredients

  • 1 cup Cocowhip thawed
  • 1 cup Vanilla Greek yogurt I used Oikos Triple Zero
  • ½ cup cherry pomegranate chia jam I used the Smash foods brand
  • 1 cup freeze-dried strawberries

Instructions

  • Mix it up: In a large bowl, mix the thawed Cocowhip and Greek yogurt until fully combined and smooth.
  • Spread it out: Line a quarter sheet pan or baking sheet with parchment paper or wax paper. Pour the yogurt mixture onto the sheet and spread into an even layer.
  • Swirl in the jam: Dollop tablespoons of your chia jam all across the yogurt mixture. Use a fork or toothpick to swirl it in—it doesn’t have to be perfect!
  • Top it off: Sprinkle freeze-dried strawberries (or fresh fruit) all over the top.
  • Freeze: Place the whole tray in the freezer for 6-8 hours, or overnight, until completely solid.
  • Slice and serve: Once frozen, use a sharp knife to slice into small pieces or big squares—however you like it!
