Easy and Cozy Fall Sheet Pan Dinner

This hearty Fall Sheet Pan Dinner combines roasted gnocchi, Brussels sprouts, delicata squash, and sausage for a delicious one-pan meal full of comforting fall flavors!

Equipment

  • 1 XL Sheet Pan or 2 large sheet pans

Ingredients
  

  • 1 16–18 oz package potato gnocchi
  • 1 lb Brussels sprouts halved
  • 1 small delicata squash seeded and chopped
  • 1 lb chicken or turkey sausage
  • Avocado oil drizzled (or olive oil if preferred)
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon turmeric
  • 1 cup crumbled feta cheese
  • Hot honey for drizzling

Instructions
 

  • Step 1: Prep your sheet pan. Preheat your oven to 400°F and grab an XL baking sheet (trust me, you’ll want plenty of room for everything to get golden brown and crisp-tender).
  • Step 2: Add your veggies & gnocchi. On your large baking sheet, toss together the Brussels sprouts, delicata squash, and gnocchi. Drizzle with avocado oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Toss until everything is evenly coated and spread into a single layer.
  • Step 3: Add the sausage. Form the chicken sausage into small balls or clumps and place them evenly on top of the vegetables. This helps the juices from the sausage drip down and flavor everything underneath!
  • Step 4: Bake to perfection. Bake for 20–25 minutes, or until the delicata squash is fork-tender and the sausage is fully cooked through (internal temperature should reach 165°F).
  • Step 5: Finish & serve. Remove from the oven, sprinkle with crumbled feta, drizzle with hot honey, and garnish with fresh parsley if desired. Serve warm and enjoy!
