Combine Ingredients. Add your raw chicken to the crock pot along with salt, pepper, and onion powder. Pour in the Dijon mustard, honey, and minced garlic. Give everything a quick stir to make sure the chicken is evenly coated.
Slow Cook to Perfection. Cook on high setting for 2.5–4 hours or low setting for 3.5–5 hours. Since cooking times can vary with different crockpots, check your chicken on the earlier side, nobody likes overcooked chicken! Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
Shred & Mix. Once fully cooked, remove the chicken and shred it using two forks. Add it back to the slow cooker and mix until it’s fully coated in that delicious sauce.
Serve & Enjoy! My favorite way to serve this? On a sandwich bun with coleslaw and a side salad, or as part of a meal prep bowl with brown rice and veggies.
