Preheat Oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
Prepare the Bread: Arrange bread slices in a single layer on the baking sheet.
Make Garlic Oil: In a small bowl, mix olive oil and minced garlic. Brush evenly over each slice of bread.
Bake: Bake for 8 minutes until bread is lightly crisp.
Add Toppings: Spread about 2 tablespoons of cottage cheese on each slice. Add about 2 tablespoons of pizza sauce. Sprinkle about ¼ cup mozzarella cheese on top. Add your favorite toppings.
Bake Again: Return to oven and bake for another 8 minutes until cheese is melted.
Optional Broil: Broil for 1–2 minutes for a golden, bubbly finish.
Serve: Serve warm and enjoy your pizza toast.
