Easy Pumpkin Spice Energy Balls

Easy pumpkin spice energy balls made with oats, pumpkin, nut butter, and protein powder. A healthy no-bake fall snack for busy days!

Equipment

  • Cookie scoop
  • Airtight container

Ingredients
  

  • 1 cup quick oats
  • ¼ cup almond butter or peanut butter
  • 2 tablespoons maple syrup
  • ¼ cup pumpkin puree
  • 1 scoop vanilla protein powder of choice
  • ½ teaspoon pumpkin spice
  • Optional:
  • 2 - 3 tablespoons mini chocolate chips

Instructions
 

  • Combine the Ingredients- Add the quick oats, almond butter or peanut butter, maple syrup, pumpkin puree, vanilla protein powder, and pumpkin spice to a small mixing bowl. Mix with a spoon until everything is well combined and you have a cohesive mixture.
  • Add Chocolate Chips- If using, stir in 2–3 tablespoons of mini chocolate chips. You can use dark chocolate chips, milk chocolate chips, or your favorite chocolate variety.
  • Roll Into Balls- Use a cookie scoop to create even portions. Roll each portion between your hands until it forms a smooth, round ball.
  • Chill- Place the pumpkin spice energy balls into an airtight container and refrigerate for at least 2 hours before enjoying. Chilling helps the mixture firm up and gives you the best texture.
