Looking for the perfect no-bake easy treat to cool down on hot summer days? My Frozen Berry Graham Cracker Sandwiches are the answer to your sweet, fruity cravings! They're basically my version of an ice cream sandwich, but made with better-for-you ingredients and so easy to whip together!
1Package (14.4 oz box)Graham crackers chocolate, regular, or cinnamon
1TeaspoonVanilla Bean Pasteoptional

Instructions
In a large bowl, stir together the chopped strawberries, blueberries, vanilla bean paste (if using) and thawed coconut whipped cream until fully combined.
Line your baking dish or glass storage container (I used an 11 x 7.5 Rubbermaid glass container!) with a single layer of graham crackers at the bottom.Spread the berry whipped mixture over the crackers.Top with another single layer of graham crackers, gently pressing down.
Cover tightly with plastic wrap or a lid and place in the freezer for 6-8 hours or overnight.
Let thaw for 5–10 minutes before serving to soften the berries slightly. Cut into even squares and enjoy your delicious treat!
