This healthy boursin and pasta bake is loaded with vegetables for nutrients and fiber, features chicken sausage for some lean protein and uses whole wheat pasta for a balanced and wholesome meal packed with flavor and fun! This weeknight dinner is perfect year round and is absolutely delicious! It's also meal prep friendly!

1TablespoonAvocado Oil
¾TeaspoonSaltor to taste
¾TeaspoonPepper
1TeaspoonGarlic powder
1TeaspoonOnion Powder
1TeaspoonSmoked Paprika
1TeaspoonOregano
2-3Garlic ClovesMinced
12ouncesWhole Wheat PastaDry
¼CupParmesan CheeseShredded or Grated

Instructions
Start by pre-heating your oven to 400 F.
Next, add your boursin cheese to the center of a 9x13 casserole dish. Then add in all of your vegetables and chicken sausage on top.
Next, drizzle your vegetables and sausage with some avocado oil and then season with your salt, pepper, garlic powder, onion powder, smoked paprika and oregano. Then add in your minced garlic and then use tongs to toss everything together gently while keeping the boursin in tact.
Cover with foil and bake for 40-45 minutes or until your vegetables are soft and cooked through.
While your boursin and vegetables cook, prepare whole wheat pasta according to the instructions on the packaging until al dente.
Once everything is cooked through, remove the pan from the oven, remove the foil and mix everything together. Then add in your cooked whole wheat pasta and mix everything together again until everything is well combined.
Add grated or parmesan cheese on top and then mix everything again. Top with some freshly chopped parsley. Serve and enjoy!
