Add your low-fat ricotta cheese, powdered sugar, vanilla bean paste and 1 tablespoon of mini chocolate chips into a small bowl.
Mix throughly until everything is combined. Top with ½ tablespoon of additional mini chocolate chips. Serve with fruit, cookies or graham crackers. I love using strawberries!
