Italian Meal Prep Pasta Salad

Ingredients
  

  • 5 oz havarti cheese cubed
  • 4 oz Italian dry salami
  • ½ cup banana peppers
  • 1 can arthicoke hearts finely chopped
  • ¼ cup black olives sliced
  • 2 Persian cucumbers diced
  • 6 sweet peppers diced
  • ¼ cup sun dried tomatoes
  • 8 oz rotini pasta cooked
  • fresh dill optional

Dressing

  • ¼ cup olive oil
  • 2 tbs apple cider vinegar
  • ½ lemon juiced
  • Salt and pepper to taste
  • 2 fresh garlic grated
  • ¼ cup fresh Parmesan
  • 12 oz rotisserie chicken shredded (optional)

Instructions
 

  • Prepare the Ingredients- Cook rotini pasta according to package directions until al dente. Drain, rinse with cold water, and allow the pasta to cool. Cube the havarti cheese, dice the cucumbers and sweet peppers, finely chop the artichoke hearts, and prepare the remaining ingredients.
  • Assemble the Salad- In a large bowl, combine cooked pasta, havarti cheese, salami, banana peppers, artichoke hearts, black olives, cucumbers, sweet peppers, sun-dried tomatoes, and shredded rotisserie chicken if using.
  • Make the Dressing- In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, grated garlic, Parmesan cheese, salt, and black pepper until well combined.
  • Toss Everything Together- Pour the dressing over the pasta salad and toss until evenly coated.
  • Serve- Serve immediately or chill before serving for even better flavor.
