These copycat healthier McGriddle bites are delicious, perfect for meal prep and a crowd pleaser! They are not only extremely easy to make, but they are perfect for the whole family and especially great to bring to a potluck!
2 12 Cup Muffin Baking Pans or 24 Cup Bite Sized Muffin Baking Molds
1 Whisk
1 Medium Mixing Bowl
12-24 Silicone Muffin Liners
1 Oven
1 Large Skillet
1 Meat Masher
Ingredients
1PoundCooked Turkey Sausage seasoned with salt and pepper, to tasteYou can substitute for Pork sausage or Maple Pork Sausage but turkey sausage is the healthiest
1.5CupsMilk of ChoiceI used low-fat cow's milk but you can use your favorite.
¼CupMaple Syrup+ more for topping
2CupsKodiak Buttermilk Pancake MixThis mix is higher in protein and absolutely delicious. You can substitute for another pancake mix if needed, however.
1CupMild Cheddar CheeseChoose low-fat for a healthier option.

Preheat your oven to 350 F and set your rack to the middle position.
Cook your sausage on a large skillet on medium high heat for about 7-8 minutes or until the sausage is no longer pink and the internal temperature reaches 165 F. Use a meat masher if needed to break apart the meat and don't forget to season with salt and pepper, to taste.
Add your cooked sausage, milk of choice, maple syrup, Kodiac buttermilk pancake mix and cheddar cheese to a medium bowl. Mix using a whisk or a rubber spatula until everything is combined and there are no dry spots of pancake mix.
Portion your batter out into muffins or mini muffins (depending on the size you desire). I did a little bit of both and I used a medium cookie scoop and a small cookie scoop to portion out the batter.
Bake for 19-23 minutes or until a toothpick stuck into the center of a muffin comes out clean.
Hint: This recipe will make either 18 normal sized muffins or 48 smaller bite-sized muffins.
