One Pan Lemon Herb Salmon

This one pan lemon herb salmon with brussels sprouts is out of this world! This dish exemplifies the epitome or easy yet gourmet cooking, as salmon fillets mingle with the vibrant zesty lemon and aromatic herbs, all harmoniously prepared in a single pan. Ingredients
  

For the Brussels Sprouts

  • 1 pound Brussles Sprouts halved
  • 1 tablespoon Avocado Oil
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Paprika

For the Salmon

  • 1 pound Salmon Fillets
  • 1 spray Avocado Oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 tablespoon Butter Melted
  • 3 cloves Fresh Garlic Minced
  • 1 tablespoon Fresh Chives Chopped
  • 1 tablespoon Fresh Dill Chopped
  • 1 tablespoon Fresh Basil Chopped
  • 1 Lemon Sliced

Instructions
 

  • Preheat your oven to 425 F and set your rack to the middle position.
  • Add your brussels sprouts, avocado oil and spices to your baking pan and toss until the seasonings and oil are evenly distributed on your vegetables. Place in the oven to bake for about 10 minutes.
  • While your vegetables are baking, add your melted butter, minced garlic cloves, and herbs into a small bowl and mix.
  • Remove your pan from the oven, and set your pan down on a heat protected surface. Use a utensil to push the brussels to the side to of your baking dish to create a clean center in the middle where you will add in your salmon fillets.
  • Once you have added your salmon fillets, spray your salmon fillets with avocado oil and season your salmon with salt and pepper. Spoon your herb butter mixture on top of the salmon fillets and evenly distribute across the top surface of your salmon using a basting brush or spoon. Add lemon slices on top and bake for another 12 minutes.
  • Remove your salmon from the oven, give your lemon slices a squeeze over the salmon fillets and serve!

    • Dairy Free- Use dairy free butter to make this recipe dairy-free.
    • Brussels Sprouts- If you dont have or dont like brussels sprouts, this recipe would work well with fresh green beans, broccoli and broccolini as well.
This recipe is already gluten-free.

    • Spicy - Add chili pepper flakes to add a kick to this recipe.

Storage

You can store this one pan lemon herb salmon in the fridge in an air tight container for up to 5 days or in the freezer for up to 3 months.

Top tip

Make sure not to be extra careful not to burn yourself when you remove the hot baking pan from the oven to add in the salmon fillets.
