Equipment

  • 1 9x13 ceramic baking dish

Ingredients

  • 2 fillets Chicken Breast
  • 2 cups Broccoli
  • 1 tablespoon Avocado Oil
  • ¾ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Onion Powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoons Ground Mustard
  • 2 tablespoons Stone Ground Mustard or Dijon Mustard
  • ½ cup Pretzels crushed
  • 2 tablespoons Honey drizzled

Instructions

  • Preheat your oven top 400 F and set your rack to the middle position.
  • Add 2 Chicken Breast Slices to the center of a 9x13 ceramic baking dish. Then add in your vegetable of choice. I chose broccoli and used about 2 cups.
  • Add your drizzle of avocado oil, and season with your salt, pepper, onion powder, garlic powder and ground mustard. Toss until the seasonings are well combined.
  • Add about 1 tablespoon of mustard to the top of each chicken breast and use a basting brush to evenly spread the mustard across the top surface of your chicken.
  • Add about ¼ cup of crushed pretzels to the top of the mustard. Use a spoon to push down the pretzel coating an help it to stick.
  • Bake for 20-25 minutes or until your chicken reaches an internal temperature of 165 F. Remove your pan from the oven and place on a temperature safe surface.
  • Add a large drizzle of honey to the top of each chicken breast and serve with your favorite non-starchy vegetable and starchy carbohydrate for a balanced and filling meal.
  • Hint: Be careful not to remove your seasoning as you are spreading the mustard on your chicken with the basting brush.
