Instructions
In a medium air tight container, add in the chia seeds, followed by pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract and milk of choice. Mix thoroughly for about 30-60 seconds using a whisk. Your chia seeds should slowly start to suspend and become more gelatinous.
Cover/ seal your container and place in a fridge overnight or for at least 2-3 hours. Give your pudding a stir when you are ready to eat it! Enjoy with your favorite toppings!
