Pumpkin Spice Chia Pudding

This pumpkin spice chia pudding is healthy, festive and delicious. It's a perfect breakfast or a snack and it's also meal prep friendly!

Equipment

  • 1 Whisk or Fork
  • 1 Medium Air Tight Container

Ingredients
  

  • ¼ Cup Chia Seeds
  • ¼ Cup Pumpkin Puree
  • 1 Cup Milk of Choice
  • 2 Tablespoons Maple Syrup or Honey
  • ½ Teaspoon Pumpkin Pie Spice
  • 1 Teaspoon Vanilla Extract

Instructions
 

  • In a medium air tight container, add in the chia seeds, followed by pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract and milk of choice. Mix thoroughly for about 30-60 seconds using a whisk. Your chia seeds should slowly start to suspend and become more gelatinous.
  • Cover/ seal your container and place in a fridge overnight or for at least 2-3 hours.  Give your pudding a stir when you are ready to eat it! Enjoy with your favorite toppings!

Notes

Hint: You can add some almond butter, granola or greek yogurt to make this a little more filling. It's absolutely delicious!
