Step 1: Cook the Pasta- Cook pasta according to package directions. Drain and set aside.
Step 2: Grill the Chicken- While the pasta cooks, heat your grill or grill pan over medium-high heat. Grill the pesto chicken breasts for 6–8 minutes per side, or until the internal temperature reaches 165°F. Let rest for a few minutes, then slice!
Step 3: Assemble the bowls: Start with a base of the cooked fusili pasta. Add sliced grilled chicken on top. Spoon over a generous scoop of bruschetta sauce. Nestle in half a ball of burrata per bowl. Finish with a big drizzle of balsamic glaze and a pinch of fresh herbs if you’re feeling fancy! Enjoy!
