  • ½ Head of Lettuce Chopped
  • ¼ Medium Red Onion Chopped
  • ¼ Large English Cucumber Chopped
  • 4 Pieces Red Mini Peppers Chopped
  • 4 Medium Grape Tomatoes Chopped
  • 4 Chips Beer Pickles Chopped
  • 2 Tablespoons Banana Peppers Chopped
  • 4 Slices Mortadella Chopped
  • 4 Slices Pepperoni Chopped
  • 1 Slice Pepper Jack Cheese Chopped
  • 1 Tablespoon Avocado Mayo
  • 1 Teaspoon Olive Oil optional
  • ½ Tablespoon Apple Cider or Balsamic Vinegar
  • ¼ Teaspoon Pickle Seasoning or Italian Seasoning
  • ¼ Teaspoon Pepper

Instructions
 

  • Start by preparing the ingredients that you want to use in your sub in a tub. Do basic prep work such as cutting the lettuce it in half, cutting the cucumber into slices, removing the tops of the peppers, slicing the onion, cutting the mortadella so it can fit in the chopper, etc.
  • Then grab your veggie chopper and add in the large chopping insert followed by your head of lettuce. Use your chopper to chop the lettuce. Add in the cucumbers and repeat with the remaining ingredients through the cheese. Once your cheese has been chopped, you can remove the topper, add in your avocado mayo, olive oil (if using), apple cider vinegar or balsamic vinegar and your seasonings. Toss and enjoy!
  • Hint: You can meal prep this sub in a tub by removing the contents from the veggie chopper and into an air tight container and adding your mayo, oil, vinegar and seasonings when you are ready to serve.

Notes

Substitutions

  • Lettuce - instead of romaine lettuce, you can use spinach
  • Mortadella - use turkey or ham instead of mortadella if you don't like or have it.
  • Vegetarian - skip the meat to make this recipe vegetarian.
  • Dairy-free- skip the cheese to make this recipe dairy-free.
This recipe is already gluten-free.

  • Spicy - add chili pepper flakes to make this spicy
