Instructions

- Step 1: Prep your pastry cups. Preheat your oven to 425 F. Cut your puff pastry sheet into 24 squares (6 strips vertically, 4 horizontally). Place each square into a mini muffin tin and press gently so the bottom is flat.

- Step 2: Add the fillings. Add one small slice of brie (room temperature works best!) to each pastry cup. Spoon 1 teaspoon of sweet fig jam on top.

- Step 3: Bake until golden brown. Spray lightly with cooking spray and bake 10-12 minutes, or until puffed and golden brown. Use a metal spatula if any need help releasing!

- Step 4: Garnish and serve. Top with fresh rosemary and pomegranate seeds for the prettiest color pop. Serve warm and watch everyone devour them!

Substitutions
- Gluten-Free- Use gluten-free puff pastry (found at some grocery stores or online). Sweet Loren's makes one! Or use mini gluten-free phyllo shells!
- Dairy-Free- Swap brie for a dairy-free soft cheese alternative (like dairy-free brie or cashew cheese). Choose a dairy-free puff pastry-most are naturally dairy-free!
- fig jam- swap for cranberry sauce, apricot jam, or pepper jelly.
This recipe is naturally vegetarian as is.
Variations
- Lighter, Floral: Use honey + fresh thyme for a lighter, floral version.
- Crispy: Try mini phyllo shells for a crispy, delicate option.
- Crispy prosciutto: Add a tiny piece under the brie before baking.
- Caramelized onion brie bites: Sweet + savory combo!
- Cranberry brie bites: Perfect for Thanksgiving or Christmas.

These bites are naturally portion-controlled thanks to the mini muffin tin! Pair them with a veggie-forward platter, like roasted carrots, green beans, or a big holiday salad and some protein to create a balanced spread without sacrificing flavor or fun.
FAQ

Absolutely. Freeze unbaked bites and bake straight from frozen-just add 2-3 extra minutes.
Goat cheese, camembert, or a soft triple-cream brie are all great options.
