These gluten-free spinach banana pancakes are absolutely delicious, packed in nutrient dense ingredients, and SO easy to make. They’re perfect for baby led weaning, they’re toddler-friendly and they come together in under 30 minutes. They’re make-ahead, meal prep and freezer friendly too!
These pancakes are great year round, but they can be particularly fun for Christmas or St. Patrick’s Day! Use a Christmas tree cookie cutter to make these into fun little tree shapes during Christmas or a Clover shaped cookie cutter to make these into a Shamrock for St. Patrick’s Day!

Ingredients
- Banana
- Large Egg
- Fresh Spinach
- Baking Powder
- Vanilla Extract
- Almond Flour
- Whole Milk Or Milk of Choice

Instructions
- Place all of your ingredients into a blender and blend on high for 1 minute until everything is combined and smooth.
- Using an electric griddle, a large pan or a silver dollar pancake griddle on medium to low heat, add your batter (around 2 tablespoons) and cook for about 3-4 minutes on each side.
- Serve with your favorite toppings or set aside to cool and then store in an air tight container in the fridge for up to 7 days or freeze for up to 3 months.
Hint: You know your pancakes are ready to flip, when they start to bubble!
Substitutions
- Dairy-Free – Use a plant based or non-dairy milk to make this recipe dairy-free.
- Vegan/ Vegetarian– You can try to use a flaxseed egg and a plant based milk to make this recipe vegan and vegetarian but I have not tried the flaxseed egg method with this recipe.
This recipe is already gluten-free.

Storage
Let the pancakes cool completely and then store in an air tight container in the fridge for up to 7 days or you can freeze them in an air tight ziplock bag for up to 3 months.
Top tip
Make sure not to overheat the pan or they will burn and brown too much before they’re cooked through all the way!
