    Ingredients

    • Stew meat – or use cubed round steak, chuck roast, or top sirloin steak for best results. Cut into bite-sized pieces. Alternatively, you can use pre-cubed stew meat.
    • Yellow onion, sliced or chopped
    • Kosher salt
    • Black pepper
    • Garlic powder
    • Onion powder
    • Cloves fresh garlic, minced
    • Unsalted butter, sliced into pats
    • Baby Bella mushrooms, optional but delicious
    • Optional additions: a splash of Worcestershire sauce or soy sauce for depth of flavor, or ½ teaspoon little brown sugar for a sweet-savory balance, you can also add in a splash of unsalted beef stock or beef broth to make a richer broth.

    Instructions

    Step 1: Add the beef stew meat to the bottom of the slow cooker.

    Step 2: Top with sliced onion, kosher salt, black pepper, garlic powder, onion powder, and minced garlic.

    Step 3:Use clean hands or tongs to mix well and evenly coat the meat with seasoning.

    Step 4:Layer pats of unsalted butter over the top. Scatter in the mushrooms if using.

    Cover and slow cook on LOW for 5–7 hours or on HIGH for 3–4 hours, until the steak cooks down into tender bites of steak and the juices are bubbling.

    • Over white rice or egg noodles with a crisp side salad.
    • Stuffed in corn tortillas with chopped onions, cilantro, and hot sauce

    Substitutions and Variations

    • Swap stew meat with sirloin steak, chuck roast, or flat iron steak for different textures.
    • Add petite Yukon gold potatoes or red potatoes for a one-pot potatoes meal.
    • Want a sauce? Make a cornstarch slurry to thicken the juices before serving.
    • Dairy-Free: Use Olive oil or avocado oil instead of butter to make this recipe dairy-free.

    Storage

    Store leftover steak bites in an airtight container in the fridge for up to 4 days.

    You can also freeze them in a freezer-safe container or freezer bag for up to 3 months. Be sure to squeeze out as much air as possible to avoid freezer burn.

    To reheat: warm over medium-high heat in a large skillet, or microwave until heated through. Add a splash of beef broth to loosen the sauce if needed.

    Top Tip

    Use a meat thermometer if subbing in a different cut like top sirloin steak to avoid overcooking. And always slice your butter thinly so it melts evenly across the top.
