    Egg Salad Bento Box

    This make-ahead egg salad bento box is a perfect combination of flavors and textures. The creamy egg salad, made with perfectly boiled eggs, red onions, capers, pickles and a hint of mayonnaise, takes center stage. It’s nestled alongside honey mustard pretzel thins for dipping and fresh fruit for additional nutrients and fiber. This egg salad bento box is a wholesome choice for a healthy and easy lunch, full of important nutrients your body needs to thrive!

    You can enjoy this delicious egg salad year round. It is so easy to make and so delicious and flavorful.

    Ingredients

    • Hard Boiled Eggs, Sliced
    • Red Onions, Chopped
    • Capers
    • Dill Pickles, Chopped
    • Avocado Oil Mayo
    • Pepper
    • Pickle Seasoning from Trader Joe’s
    • Honey mustard pretzel thins
    • Cotton candy grapes
    • Strawberries

    Instructions

    1. Use a hardboiled egg slicer to slice the hardboiled eggs and place them into a bowl along with chopped red onions, capers, chopped dil pickles, mayo, pepper and pickle seasoning. Use a fork to mash all the ingredients together until everything is well combined.
    2. Add into your favorite bento box in one compartment followed by honey mustard pretzel thins in a separate compartment. Then add in your fruit into the third compartment.

    Hint: If you are prepping this in advance and you are using crackers, make sure to wrap them up with seran wrap to prevent the crackers from getting soggy.

    I personally would recommend storing the egg salad into an air tight container and preparing the bento box the day you plan to consume it!

    Substitutions

    • Mayo – feel free to use your favorite mayo- classic, olive oil or homemade are all fine.
    • Gluten-Free– Choose gluten-free crackers to make this recipe gluten-free.

    This recipe is already dairy-free and vegetarian.

    Variations

    • Spicy – add chili pepper flakes to the egg salad
    • Honey Pretzel Thins -feel free to substitute crackers for naan dippers, seed crackers or your favorite ritz crackers.
    • Fruit– feel free to substitute the strawberries and grapes for whatever fruit you have on hand. Also feel free to substitute for veggies such as sliced carrots, cucumbers or peppers.
    • Toddler friendly– I would skip the capers and rinse the pickles in the egg salad to reduce sodium content to make this recipe toddler-friendly.

    This recipe is kid friendly!

    Equipment

    Although it’s not absolutely necessary, I recommend using an egg slicer to make this process easier.
