These graham cracker sandwiches are not only adult approved but they're toddler and kid approved too! They're the perfect way to beat the heat and satisfy your sweet tooth without spending a lot of time in the kitchen. The red, white and blue colors also make them perfect for Fourth of July, Memorial day or any national holiday! Make a big batch for your next BBQ, playdate, or event!

Here’s what you’ll need for these sweet treats:
- Chopped strawberries – Juicy, sweet, and perfect for that fresh berry burst.
- Blueberries – Adds a slightly tart contrast and beautiful color!
- Thawed coconut whipped cream – Light, fluffy, and dairy-free for a creamy filling. I use the so delicious cocowhip.
- Vanilla Bean Paste (optional)
- Graham crackers – The crispy base and top for our sandwich magic! You can use the plain ones or ones with the cinnamon sugar topping.

Instructions

- Step 1: In a large bowl, stir together the chopped strawberries, blueberries, vanilla bean paste and thawed coconut whipped cream until fully combined.

- Step 2:Line your baking dish or glass storage container (I used an 11 x 7.5 Rubbermaid glass container!) with a single layer of graham crackers at the bottom.Spread the berry whipped mixture over the crackers.Top with another single layer of graham crackers, gently pressing down.

- Step 3: Cover tightly with plastic wrap or a lid and place in the freezer for 6-8 hours or overnight.

- Step 4: Let thaw for 5–10 minutes before serving to soften the berries slightly. Cut into even squares and enjoy your delicious treat!

Substitutions
- Graham crackers: Use gluten-free graham crackers if you need a gluten-free option, or try chocolate graham crackers for extra flavor!
- Coconut whipped cream: Swap with Cool Whip or even homemade whipped cream (just make sure it’s stabilized for freezing).
- Strawberries and blueberries: Sub in any of your favorite berries like blackberries, raspberries, or even chopped mango or peaches for a tropical twist.
- Want extra sweetness?: Add a drizzle of pure maple syrup, organic cane sugar, or honey to the berry mixture before spreading.
