    Apple Chicken Meatballs

    These maple apple chicken meatballs are probably the most delicious meatballs I’ve ever made! The combination of the sweet apple and maple with the saltiness coming from the cheese and the savory chicken come together beautifully to create the most delicious combination. This meatball recipe is so easy to make ahead for the week and can be served as a protein source for a healthy fall bowl or to your toddlers and kids for their meals throughout the week.

    Ingredients

    This is a picture of all the ingredients in the maple apple chicken meatballs. Ground chicken, cheese in a small bowl, almond flour, egg, minced shallots in a small bowl, minced apples in a small bowl, maple syrup, pepper and salt.

    Instructions

    1. Preheat your oven to 400 F and set your rack to the middle position.
    2. Add all of your ingredients into a medium bowl, mix until everything is well combined.
    3. Use a medium cookie scooper to scoop your meatballs onto a non stick baking sheet.
    4. Bake for 15 minutes or until the meatballs reach an internal temperature of 165 F. Enjoy!

    Hint: You can use parchment paper for easier clean up.

    Substitutions

    • Maple syrup– You can substitute the maple syrup for honey.
    • Gouda- You can substitute the gouda for mozzarella.
    • Almond Flour– You can substitute the almond flour for panko bread crumbs or regular flour.

    This recipe is already gluten-free.

    Variations

    • Kid friendly – add crushed potato chips (ketchup chips!)
    • Chicken– Try these with pork or turkey to change it up a bit!

    Equipment

    All you need to make these apple chicken meatballs is a baking sheet, a medium bowl, and an oven.

    Storage

    You can store these maple apple chicken meatballs in the fridge in an air tight container in the fridge for up to 7 days

    You can also freeze this recipe. Let the meatballs cool completely, place in a large freezer bag. Remove the air from the bag completely and freeze for up to 3 months. When you are ready to serve, thaw overnight in the fridge and reheat on a baking sheet.

    Top tip

    This meatball recipe is great to make ahead for the week. Prepare them on Sunday and use them as a protein source for a variety of meals throughout the week for your whole family (babies, toddlers, kids lunch box and adult meal prep too).

    Yes, these meatballs are gluten-free because we use almond flour.

    Yes, this recipe is great to “ingredient” prep as a protein source for your whole family and use in many different meals throughout the week.

      Not gonna lie, these chicken meatballs were ugly when I made them but they were SO GOOD. I’m definitely gonna be making these for my whole fam regularly!
