These pumpkin baked oatmeal bars are not only festive but the added chocolate chips makes them truly decadent too! They are so easy to make and your whole family will absolutely love them! You can either enjoy these on the weekend for breakfast or as a snack. They also make for a delicious fall breakfast meal prep to enjoy throughout the week.

Ingredients
- Quick oats
- Chopped walnuts
- Cinnamon
- Nutmeg
- Pumpkin pie spice
- Chocolate chips
- Canned pumpkin puree
- Large eggs
- Maple syrup
- Vanilla extract
- Milk of choice
- Coconut oil

Instructions
- Preheat oven to 350 F and set your rack to the middle position. Line an 8×8 pan with parchment paper.
- In a large bowl, add dry ingredients (quick oats, chopped walnuts, cinnamon, nutmeg, pumpkin pie spice and chocolate chips). Then, give it a good mix with a whisk until everything is well distributed.
- In a separate medium bowl, add wet ingredients (canned pumpkin pie puree, eggs, maple syrup, vanilla, milk of choice, and melted and cooled coconut oil) whisk until all wet ingredients are well combined.
- Add wet ingredients to dry ingredients and mix until just combined (make sure not to over mix). Pour ingredients into parchment lined pan. Evenly distributed the mixture throughout the pan. Optional: Measure out about another ¼ Cup of Chocolate chips) and sprinkle on top. Bake for 30-35 minutes or until a toothpick stuck in the center of the baked oats mixture comes out clean. Let cool for 15-20 minutes before slicing into bars. ENJOY!
Substitutions
- Vegan– Use one banana (½ a banana per egg in the recipe) and milk alternatives to make this recipe vegan!
- Maple Syrup– You can easily substitute maple syrup for honey.
- Dairy-free– Use dairy-free chocolate chips and choose a non-dairy milk to make this recipe dairy-free.
- Gluten-free- Although oatmeal does not contain gluten in of it self, the facilities used to process oatmeal may also be processing products with gluten, therefore to ensure that this recipe is gluten-free, choose certified gluten-free quick oats.
This recipe is already vegetarian.
Variations
- Dessert- add some cream cheese icing or whipped cream on top of the pumpkin baked oatmeal bars and enjoy them as a dessert.
