Instructions

2. Step 2: Prep your veggies and sausage. Add your diced sweet potatoes, halved Brussels sprouts, and sliced chicken sausage directly to the large sheet pan.
3. Step 3: Season everything. Drizzle with avocado oil, then sprinkle on the salt, black pepper, garlic powder, onion powder, and paprika. Toss until everything is evenly coated and spread into a single layer so the veggies roast, not steam.
4. Step 4: Bake until golden. Roast in your preheated oven for 20-23 minutes, or until the sweet potatoes are fork tender and the Brussels sprouts are lightly caramelized.
5. Step 5: Make the glaze. While the sheet pan is baking, whisk together Dijon mustard, honey, fresh garlic, salt, and black pepper in a small bowl until smooth.

Hint: If you don't have an XL baking sheet and you aren't able to get your chicken sausage and vegetables in an even, single layer, use two separate sheet pans.

Substitutions

• Sweet Potato- Use regular potato, red potatoes, or butternut squash if you don't have or don't like sweet potatoes.
• Not into Brussels sprouts? Try green beans or bell peppers
• Different sausage -If you can't find apple chicken sausage, swap in your favorite chicken sausage or even Italian sausage.
• No Honey? use pure maple syrup instead of honey in your Dijon glaze.
• Vegetarian - use tofu or tempeh instead of chicken sausage to make this recipe vegetarian.
• Vegan - use tofu or tempeh and substitute honey for maple syrup to make this recipe vegan.

This recipe is already gluten-free and dairy-free.

Variations

• Spicy - Add a touch of cayenne to the seasoning blend and use hot honey instead of regular honey in the glaze to make this recipe spicy!
• Deluxe- top with crumbled goat cheese after baking to add a creamy tanginess.
• BLW/ Toddler friendly- Chicken sausage can be high in sodium, nitrates and pose a choking hazard. To make this recipe toddler friendly, substitute chicken sausage with chicken breast.
