This healthy(ish) Mississippi pot roast is not only absolutely delicious but is SO easy to throw together on a busy week and requires just 5 ingredients. Set the crockpot and forget it until you’re ready to serve! I suggest serving with some homemade mashed potatoes and a side salad for a balanced and delicious dish your whole family will love!

Ingredients
- Chuck Roast: This is the star of the dish and provides the protein source for this meal.
- Kinders Bone Broth Gravy: This packet is used instead of the Au Jus Gravy Mix Packet.
- Ranch Seasoning: I kept the ranch seasoning for ease, but feel free to make your own ranch seasoning at home! My Baking Addiction has a great homemade ranch seasoning recipe.
- Avocado Oil: This is used instead of butter for a more heart healthy fat.
- Peperoncinis + some liquid

Instructions
- Start by searing your chuck roast for about 5 minutes on each side on a large pan on medium heat.
- Add your chuck roast to a crockpot. Add in a packet of the classic bone broth gravy followed by a packet of ranch seasoning or homemade ranch seasoning. Next, drizzle with avocado oil and then add in your pepperoncinis with some of the liquid from the jar.
- Cook on high for 4-5 hours or on low for 8-9 hours or until your meat is fork tender.
- Shred your meat and serve over homemade mashed potatoes and with a side salad to add some more freshness and fiber to the dish!
Hint: while you can cook this pot roast on high, low and slow is the way to go!
Substitutions
- Kinders Bone Broth Gravy – you can use the Au Jus Gravy Mix if you can’t find the Kinder’s Bone Broth Gravy
- Ranch Seasoning– as stated above, you can make your own version at home. Trader Joe’s also has a really great version too!
This recipe is dairy-free on its own.
Variations
- Spicy – use banana peppers instead of peperoncinos for a more mild spice level. You can also adjust how many peperoncinos you add to up the spice level.
- Lower Salt- Use ½ the packet of bone broth gravy and ranch seasoning to reduce salt intake. Also skip the peperoncini juice and add beef broth or water instead.
- Kid friendly – use the banana peppers instead to reduce the spice level and make this dish more kid-friendly.
- Toddler friendly– use banana peppers instead to reduce the spice level and rinse the meat off a bit with some water to reduce the spice/sodium for smaller toddlers.

All you need to make this healthy Mississippi Pot roast is a:
6 Quart Crock-Pot: This is the crock-pot I wish we got! The one I have is aesthetically pleasing but it does cook faster than the typical crockpot!
Large Pan: This is the Caraway Non-stick ceramic pan that I use and love!

Leftovers can be stored in the fridge in an air-tight container in the fridge for up to 4 days and in the freezer for up to 3 months.

Searing the meat is optional but it does add additional flavor and is highly encouraged!

- ¾-1 Packet Kinders Bone Broth Gravy This packet is used instead of the Au Jus Gravy Mix Packet.

- 2 Tablespoons Avocado Oil
- ½ Jar (8 ounces) Peperoncini Peppers Add more or less depending on desired spice level
- ¼ Cup Peperoncini Pepper Juice from Jar

Insanely good. So easy to throw together and because it was an extra busy day I ended up adding my chopped potatoes to it for the last couple hours in lieu of mashed and they soaked up some of the gravy and it all was so comforting hearty and delicious
