    Birthday Cake Pancake Bowl

    If you’re looking for an easy, healthy and lazy breakfast that’s perfect for busy mornings, look no further than this birthday cake pancake bowl! It’s not only super easy to throw together, but it comes together in under 5 minutes from start to finish!

    Ingredients

    • Buttermilk Kodiac Cakes Pancake Mix
    • Water: I would recommend using water instead of milk to make sure this pancake comes out perfectly fluffy.
    • Cake Batter Extract: Substitute for vanilla if you don’t have cake batter extract on hand.
    • Dye-Free Sprinkles

    Top with:

    • Greek Yogurt
    • Dye-Free Sprinkles
    • Maple Syrup

    Instructions

    1. Add all of your ingredients except for the sprinkles into a medium bowl. Mix until everything is just combined. Make sure there are no dry flour spots.
    2. Add your sprinkles on top after mixing the batter. Microwave for 60-70 seconds or until cooked through.
    3. Top with fruit, nut butter, greek yogurt and maple syrup and serve!

    Hint:Be careful not to overcook the pancake or it will dry out!

    I served my pancake with some greek yogurt, additional sprinkles and maple syrup!

    Substitutions

    • Gluten-Free– Use the gluten-free kodiac mix to make this recipe gluten-free.
    • Vegetarian – this recipe is lacto-ovo-vegetarian friendly as is.
    • Dairy-Free– Use the plant-based kodiac mix to make this recipe dairy-free.
    • Toppings– Add in chocolate chips instead of sprinkles to make a chocolate chip pancake.

    Equipment

    All you need to make this protein birthday cake pancake bowl is a medium bowl and a microwave.

    • ⅓ Cup Buttermilk Kodiac Cakes Pancake Mix

    • Hint:Be careful not to overcook the pancake or it will dry out! Also make sure to only use water with the pancake mix.

    I served my pancake with some greek yogurt, additional sprinkles and maple syrup!
     
    For additional protein, serve with nut butter or PB2. Feel free to add fruit for additional fiber as well!
