Ingredients
- Buttermilk Kodiac Cakes Pancake Mix
- Water: I would recommend using water instead of milk to make sure this pancake comes out perfectly fluffy.
- Cake Batter Extract: Substitute for vanilla if you don’t have cake batter extract on hand.
- Dye-Free Sprinkles
Top with:
- Greek Yogurt
- Dye-Free Sprinkles
- Maple Syrup

Instructions
- Add all of your ingredients except for the sprinkles into a medium bowl. Mix until everything is just combined. Make sure there are no dry flour spots.
- Add your sprinkles on top after mixing the batter. Microwave for 60-70 seconds or until cooked through.
- Top with fruit, nut butter, greek yogurt and maple syrup and serve!
Hint:Be careful not to overcook the pancake or it will dry out!
I served my pancake with some greek yogurt, additional sprinkles and maple syrup!

- Gluten-Free– Use the gluten-free kodiac mix to make this recipe gluten-free.
- Vegetarian – this recipe is lacto-ovo-vegetarian friendly as is.
- Dairy-Free– Use the plant-based kodiac mix to make this recipe dairy-free.
- Toppings– Add in chocolate chips instead of sprinkles to make a chocolate chip pancake.
