These copycat healthier McGriddle bites are delicious, perfect for meal prep and a crowd pleaser! They are not only extremely easy to make, but they are perfect for the whole family and especially great to bring to a potluck!

Ingredients
- Cooked Turkey Sausage Seasoned with Salt & Pepper, To Taste: You can substitute for Pork sausage or Maple Pork Sausage, but your healthiest option is the turkey sausage!
- Milk of Choice: I used low-fat cow’s milk but you can use your favorite.
- Maple Syrup: This will go in the batter and on top afterwards.
- Kodiak Buttermilk Pancake Mix: this mix is higher in protein and absolutely delicious. You can substitute for another pancake mix if needed, however.
- Mild Cheddar Cheese: Choose low-fat for a healthier option.

Instructions
- Preheat your oven to 350 F and set your rack to the middle position.
- Cook your sausage on a large skillet on medium high heat for about 7-8 minutes or until the sausage is no longer pink and the internal temperature reaches 165 F. Use a meat masher if needed to break apart the meat and don’t forget to season with salt and pepper, to taste.
- Add your cooked sausage, milk of choice, maple syrup, Kodiac buttermilk pancake mix and cheddar cheese to a medium bowl. Mix using a whisk or a rubber spatula until everything is combined and there are no dry spots of pancake mix.
- Portion your batter out into muffins or mini muffins (depending on the size you desire). I did a little bit of both and I used a medium cookie scoop and a small cookie scoop to portion out the batter.
- Bake for 19-23 minutes or until a toothpick stuck into the center of a muffin comes out clean.
Hint: This recipe will make either 18 normal sized muffins or 48 smaller bite-sized muffins.
Substitutions
- Gluten-Free: Use a gluten-free kodiac pancake mix to make this recipe gluten-free.
This recipe is toddler and kid friendly!

Storage
Store leftover McGriddle Bites in an air-tight container in the fridge for up to 5 days or freeze for up to 3 months. Thaw in the fridge overnight before enjoying!
