Instructions
In a medium bowl, add in your almond flour, peanut butter and maple syrup. Mix until everything is well combined and a sort of paste forms. Use a tablespoon to scoop out the mixture and use your hands to form a ball. Repeat until you are done with the mixture then set aside.
Count the number of balls you have and then grab double the number of pretzel thins. For example, if you have 10 balls, grab 20 pretzels. Grab one pretzel, place the ball on top and use your finger to gently press down on the ball to flatten it. Top with another pretzel to make a sandwich and repeat. Set aside.
In a small, microwaveable bowl, add your dairy-free dark chocolate chips and your coconut oil and heat for 30 seconds. Remove and give it a quick stir, place back in the microwave and microwave for 15 second intervals, stirring in between, until your chocolate is completely melted. Grab your pretzel sandwich and dip the edge of your pretzel into the chocolate. Set on a parchment lined plate and repeat until all pretzels have been dipped.
Top with maldon salt, if using and place into the fridge for 5-10 minutes. Serve or place in an air tight container in the fridge for up to a week.
Hint: Be careful not to break the pretzel thin when gently pressing down your filling. If you happen to break your pretzel thin, just replace it with another pretzel.
