Instructions

- Step 1: Cook the Pasta- Cook pasta according to package directions. Drain and set aside.

- Step 2: Grill the Chicken- While the pasta cooks, heat your grill or grill pan over medium-high heat. Grill the pesto chicken breasts for 6–8 minutes per side, or until the internal temperature reaches 165°F. Let rest for a few minutes, then slice!

- Step 3: Assemble the bowls: Start with a base of the cooked fusili pasta. Add sliced grilled chicken on top. Spoon over a generous scoop of bruschetta sauce. Nestle in half a ball of burrata per bowl. Finish with a big drizzle of balsamic glaze and a pinch of fresh herbs if you’re feeling fancy! Enjoy!
Substitutions
- No grill? Use a large skillet with a drizzle of olive oil to pan-sear the chicken or use a grill pan.
- Dairy-free? Skip the burrata or use a dairy-free mozzarella-style cheese.
- Can’t find the pesto marinated chicken? Use plain chicken breast and add your own pesto on top (either from a different store or home made).
This recipe is already gluten-free as is, however, it is always best to check the labels or look for a gluten-free certification to be sure (especially with sauces and marinades).
Variations
- Spicy - add chili pepper flakes to add a kick to this dish.

Christina's Dietitian Tip
This is such an easy way to get in protein, fiber, and fresh summer flavors without much effort. This recipe is already a meal on its own, but you can round it out and add some additional fiber and nutrients by offering this dish with some grilled veggies or a simple green salad!

My Trader Joe’s Bruschetta Chicken is one of those excellent recipes that feels a little fancy but takes less than 30 minutes to throw together! It’s colorful, satisfying, and packed with the kind of fresh flavors that scream “I definitely have my life together” – even if you just threw it in a bowl 10 minutes ago, haha.
