I have been on a mission to make a copycat starbucks egg bite recipe for quite some time now and I’ve finally created with this recipe! These egg bites are packed in protein and will help keep you full for hours when paired with a balanced breakfast! They also are easy to make ahead and are perfect for breakfast meal prep.
These egg bites are GREAT year round. They are SO easy to make and they were my pregnancy craving throughout my whole pregnancy and for good reason. Eggs are a great source of choline, an important micronutrient for pregnancy! These are extremely healthy and delicious. I use the full egg here because I am a huge proponent of using the whole egg for maximum health benefits!

Ingredients
- Cottage Cheese
- Cream Cheese (Full or Low fat)
- Shredded Mozzarella
- Red Peppers, Finely Chopped
- Spinach, Finely Chopped
- Eggs
- Salt
- Pepper
- Garlic Powder
- Onion Powder

Instructions
- Add all of your ingredients aside from the spinach and red pepper into a blender. Blend on high for one minute until everything is well combined.
- Evenly distribute your spinach and red peppers into the silicone molding. Then distribute your egg mixture on top and then place the clear rubber cover on top of the molding. You can also use foil to cover the rubber molding if you don’t have a rubber cover to place on top.
- Grab your instant pot, add 1 Cup of water to the inner pot. Carefully place your rubber molding on top of the metal rack that comes with the instant pot and slowly lower the rack into the pot.
- Set your instant pot on high for 10 minutes. Once it is complete, allow your pot to naturally release for 10 minutes, then quick release. Remove your egg bites from the mold and ENJOY!
Hint: Make sure to blend for the full minute to make sure that everything is well combined and to get the mixture a bit frothy.
Substitutions
- Vegetables – feel free to substitute the veggies. You can make this recipe with kale instead of spinach and mushrooms instead of red peppers for example.
This recipe is already gluten-free and vegetarian.
Variations
- Spicy – add chili pepper flakes on top or serve with hot sauce to make this spicy!
This recipe is already kid and toddler friendly! You can skip the added salt and serve for baby led weaning too!
